Hi,
You might take a look at the third-to-last example (mkZmean.ncl) at:
http://ncl.ucar.edu/Applications/xy.shtml
The key to it is using the gsnXYAboveFillColor/gsnXYBelowFillColor resource.
Hopefully that gets you started...
