Almost everything you want to do is explained on the NCL help files:
EOFs:
http://www.ncl.ucar.edu/Applications/eof.shtml
Calculating correlations (including plotting a map of the results):
http://www.ncl.ucar.edu/Applications/corel.shtml
Map plots:
http://www.ncl.ucar.edu/Applications/cylineq.shtml
In general, it's much better to check the help files and even search the ncl-talk archive BEFORE you post a question; you will often find the answer somewhere. At some point you may come across an issue that you do not understand, or a problem in your script that you have tried to fix but cannot. That's when ncl-talk can be really helpful.
Good luck,
Will
