[1] I believe Rick's assessment is correct. Use a different color table.
Likely a Re-White-Blue

     Some suggestions:
           (a) GMT_polar
           (b) hotcold_18lev

[2]  Set symmetric contour levels. The following could be used. Yo may want
to change these later.

[2a] Do you know what contour interval Fields used??? If so, set these.
