Hi Eric,
 
Agree with you. I also found this mistake 2 weeks ago.
Also I found this mistake is 'namelist.input' of Printed ARW manual I
received during "WRFv3.1 tutorial" in Seoul 15-21 April 2009. 
 
But if you go in "WRFv3.1/WRFV3/trest/em_real/namelist.input" file (the
one without any eXtentions like .4km, .fire ...) you will find the right
"sst_skin" in it.
So there is no need to dig inside a code trying to understand what's
happening with WRF.

The on-line User's Guide lists a new skin_sst variable in the &physics
section of namelist.input.  The actual variable name is sst_skin.  If
you add "skin_sst" to the namelist, the real.exe program will crash.
